Backcountry Pineapple Jalapeño Cooler

This sweet-and-spicy pineapple drink brings tropical flair to the campsite, with a lively kick from jalapeño slices, perfect for cooling off after a hot day on trail.

Ingredients

  • 1 cup pineapple chunks fresh or canned, drained
  • 1 small jalapeño thinly sliced, seeds removed for less heat
  • 2 tablespoons lime juice fresh preferred
  • 2 cups cold water or sparkling water
  • 1 tablespoon agave syrup or honey
  • 1/2 cup ice for serving

Instructions

  • In a sturdy cup, muddle pineapple chunks, jalapeño slices, and lime juice until juices are released.
  • Add agave syrup and water (or sparkling water), stir to blend.
  • Taste and adjust sweetness or spiciness as desired.
  • Pour into glasses over ice and serve immediately.

Notes

For extra chill, keep the pineapple in your cooler or use a cold stream. Adjust jalapeño amount for your preferred spice level. Great for picnic tables or beach camps.
