Instructions
Toss zucchini spears with olive oil, smoked paprika, salt, and pepper in a bowl until well coated.
Place zucchini directly on a preheated campfire grill grate.
Grill for 3-4 minutes per side, turning once, until seared and tender with grill marks.
Transfer to a plate and drizzle with lemon juice. Serve immediately.
Notes
Zucchini cooks quickly on hot coals—don’t walk away! For extra flavor, brush on more olive oil midway through cooking.
