Cast Iron Garlic-Parmesan Mushrooms

Buttery mushrooms sautéed in cast iron with garlic and finished with a shower of Parmesan. Rich, earthy, and perfect alongside grilled meats or on their own.

Ingredients

  • 1 pound cremini mushrooms quartered
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan cheese finely grated
  • 1 tablespoon fresh parsley chopped

Instructions

  • Heat cast iron skillet over medium campfire heat or stove. Add butter and olive oil.
  • Once butter is foaming, add quartered mushrooms. Sauté for 8-10 minutes, stirring occasionally, until they've released moisture and are golden brown.
  • Add garlic, salt, and pepper. Cook 2-3 minutes more, stirring constantly, until fragrant.
  • Remove skillet from heat. Sprinkle with Parmesan and parsley before serving.

Notes

Use pre-sliced mushrooms for faster prep. Cast iron keeps mushrooms piping hot at camp. Clean with a little water and scrub brush—no soap required.
