Equipment

  • 10-inch cast iron skillet
  • Mixing bowl
  • Spatula

Ingredients

  • 1 box brownie mix plus ingredients called for (usually water, oil, egg)
  • 1 cup mini marshmallows
  • 4 graham crackers broken into pieces
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup neutral oil for greasing

Instructions

  • Grease the skillet with oil. Prepare the brownie batter according to package directions in a bowl.
  • Pour batter into the skillet and smooth the top. Scatter chocolate chips over the batter.
  • Cover loosely with foil. Place skillet over medium campfire heat or on a grate. Rotate occasionally for even cooking.
  • Bake 15-18 minutes, checking doneness with a toothpick.
  • Remove foil. Sprinkle marshmallows and graham cracker pieces over the top.
  • Return skillet to low heat and cover. Cook another 2-3 minutes until marshmallows are golden and melty.
  • Let cool 5 minutes before serving directly from the skillet.

Notes

Move the skillet to a cooler section of the fire if the bottom browns too quickly. Let everyone scoop their own serving straight from the pan for a fun group treat.
