Chilled Camp Mocha Pudding Parfaits

Layers of creamy chocolate pudding, whipped topping, and a hint of instant coffee create a quick, decadent no-cook parfait. Great for van-life, overlanding, or summer car camping.

Ingredients

  • 1 package instant chocolate pudding mix 3.9 oz
  • 2 cups cold milk
  • 1 tablespoon instant coffee granules
  • 1 cup whipped topping plus extra for garnish
  • 1/4 cup mini chocolate chips

Instructions

  • In a bowl, whisk milk and instant coffee until dissolved.
  • Add pudding mix and whisk for 2 minutes until thick.
  • In each jar or cup, layer chocolate pudding, whipped topping, and a sprinkle of chocolate chips. Repeat layers if desired.
  • Top with more whipped topping and chocolate chips.
  • Chill in a cooler or fridge for 10 minutes before serving.

Notes

Instant pudding packs easily and sets quickly in a cooler. Use jars for easy serving and storage. Can be made ahead at home for road or van trips.
