Foil-Baked Campfire Sweet Potato Boats

Sweet potatoes roasted in foil and stuffed with Greek yogurt, honey, and toasted pecans. A nutritious, make-ahead-friendly breakfast perfect for cool mornings by the fire.

Ingredients

  • 2 medium sweet potatoes scrubbed
  • 1/2 cup plain Greek yogurt
  • 2 tbsp honey
  • 1/4 cup toasted pecans chopped
  • 1/2 tsp ground cinnamon

Instructions

  • Poke sweet potatoes with fork several times. Wrap each tightly in foil.
  • Nestle in hot campfire coals. Bake, turning occasionally, 35–40 minutes until fork-tender.
  • Remove, carefully unwrap, and slice down the center. Fluff insides with a fork.
  • Top with yogurt, honey, pecans, and cinnamon. Serve warm.

Notes

Roast sweet potatoes the night before, then reheat in morning coals for fast breakfast. Ideal for campsites with fire pits and extended stays.
