Foil Packet Apple-Cranberry Oatmeal Bake

Juicy apples and tart cranberries bake into tender, cinnamon-spiced oats in a foil packet for a cozy, no-mess breakfast straight from the campfire. This hearty, vegan-friendly meal is easy to prep ahead and deliciously warming on chilly mornings.

Ingredients

  • 1 cup old-fashioned oats
  • 1 1/2 cups unsweetened almond milk or water
  • 1 medium apple cored and chopped
  • 1/3 cup dried cranberries
  • 2 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp pecans roughly chopped (optional)

Instructions

  • In a bowl, combine oats, almond milk, maple syrup, cinnamon, and salt. Stir in apples and cranberries.
  • Tear 2 pieces of foil (about 16” each). Divide the mixture evenly onto the center of each.
  • Fold up sides and seal tightly to form packets, making sure mixture is well wrapped to prevent leaks.
  • Place foil packets on hot campfire coals or grill grate. Cook for 20-25 minutes, flipping halfway, until oats are creamy and fruit is tender.
  • Carefully open packets (watch for steam). Sprinkle with pecans if using and enjoy warm.

Notes

This meal is easy to scale up for larger groups—just make more packets. You can assemble packets at home and keep them chilled in the cooler until ready to cook. For extra fuel savings, place packets close to embers rather than directly over flame.
