Foil Packet Cajun Corn and Sausage Medley

Boldly seasoned corn rounds and sliced smoky sausage, tossed with Cajun spice and sealed in foil, then roasted over the fire for a robust Southern-inspired side dish.

Ingredients

  • 2 ears corn sliced into 1-inch rounds
  • 8 ounces smoked sausage sliced (andouille or kielbasa)
  • 1 medium red bell pepper diced
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon kosher salt

Instructions

  • In a large bowl, toss corn, sausage, and bell pepper with olive oil, Cajun seasoning, and salt.
  • Lay out two large sheets of heavy-duty foil. Divide mixture evenly and seal each packet tightly.
  • Place packets over hot campfire coals for 15–18 minutes, flipping once halfway through, until corn is tender and sausage is browned.
  • Carefully unwrap and serve hot.

Notes

Slice sausage and prep veggies at home for a faster campsite meal. Heavy-duty foil prevents leaks and burning. Add a bit of water for extra steam if desired.
