Foil Packet Cinnamon Berry Breakfast Bake

A sweet and satisfying campfire breakfast: bread cubes, fresh berries, and cinnamon all baked together in a foil packet for easy serving and minimal cleanup.

Ingredients

  • 2 cups cubed bread day-old or sturdy
  • 1 cup mixed berries fresh or frozen
  • 2 eggs eggs
  • 1/3 cup milk
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp butter melted

Instructions

  • Tear off two sheets of foil. Grease with melted butter.
  • In a bowl, whisk eggs, milk, brown sugar, and cinnamon.
  • Divide bread and berries between the center of each foil sheet.
  • Pour egg mixture over each packet, then fold and crimp tightly to seal.
  • Place packets over hot coals and cook 20-22 minutes, flipping once, until bread is set and berries are juicy.
  • Open carefully (steam!) and eat right from the foil.

Notes

Assemble packets ahead and keep chilled. Use sturdy bread for best results. Easy to scale for groups—just make more packets.
