Foil Packet Italian Tomato-Basil Rice

Ingredients

  • 1 cup uncooked white rice long-grain
  • 1.5 cups water
  • 1/3 cup sun-dried tomatoes oil-packed, chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a bowl, mix rice, water, sun-dried tomatoes, garlic, basil, salt, and pepper.
  • Pour into center of a large sheet of heavy-duty foil and fold tightly into a packet, sealing all edges.
  • Place packet on campfire grate or hot coals. Cook for 25 minutes, turning once, until rice is tender and water absorbed.
  • Open carefully and fluff rice with a fork. Serve hot.

Notes

Double-wrap foil and place packet near—not in—the hottest coals for gentle steaming. Oil-packed tomatoes add richness and prevent sticking.
