Forest Floor Mushroom Broth Sipper

A savory, umami-rich sipping broth made from dried wild mushrooms, miso, and a hint of ginger—restorative and grounding for chilly evenings on the trail or in camp.

Ingredients

  • 3 cups water
  • 1/2 cup dried wild mushrooms porcini, shiitake, or mix
  • 1 tablespoon white miso paste
  • 1 inch ginger root sliced
  • 1 teaspoon soy sauce or tamari

Instructions

  • Bring water and mushrooms to a gentle boil in a small pot over camp stove.
  • Add ginger and simmer 8 minutes.
  • Remove from heat and whisk in miso and soy sauce until dissolved.
  • Let steep 2 minutes, strain solids, and pour into mugs.

Notes

Great for backpacking—portion mushrooms and miso in zip bags. Drink as a restorative pick-me-up after a long day or with your meal.
