Ingredients

  • 1 lemon juice and zest
  • 1 tablespoon juniper berries lightly crushed
  • 1 tablespoon honey or simple syrup
  • 1 cup cold water
  • 1 cup sparkling water
  • to garnish fresh herbs thyme or rosemary

Instructions

  • In a mason jar, muddle juniper berries with lemon juice, zest, and honey.
  • Add cold water, stir, then strain into glasses filled with ice.
  • Top with sparkling water and garnish with fresh herbs.
  • Serve immediately for best fizz.

Notes

Lightly crush juniper berries for flavor without bitterness. Foraged berries should be correctly identified. Pre-chill sparkling water in a cooler if available.
