Italian White Bean Bruschetta Bites

Toasty bread rounds topped with garlicky white bean mash, juicy tomatoes, and basil. A rustic Italian snack perfect for van-life picnics and campsite happy hour.

Ingredients

  • 1/2 loaf baguette cut into 8 slices
  • 1 can cannellini beans drained and rinsed
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh basil chopped
  • 1/2 cup cherry tomatoes diced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  • Grill or toast baguette slices on a skillet or grill over medium heat, 2-3 minutes per side until crisp.
  • Mash beans with garlic, olive oil, salt, and pepper in a bowl until mostly smooth.
  • Spread bean mash on toasted baguette. Top with diced tomatoes and fresh basil. Drizzle with extra olive oil if desired.
  • Serve immediately or pack for later.

Notes

Toast bread directly on the grill for extra flavor. Bean mash can be made ahead for easy assembly at camp. Portable and ideal for van-life snacks.
