Maple Bacon Granola Parfaits

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup pecans roughly chopped
  • 4 slices bacon chopped
  • 3 tbsp pure maple syrup
  • 2 tbsp vegetable oil
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt
  • 2 cups Greek yogurt
  • 1/2 cup fresh blueberries

Instructions

  • Preheat skillet over medium heat on campfire grate or stove. Add bacon and cook until crispy, about 5-6 minutes. Remove bacon with a slotted spoon; set aside on paper towels. Pour off excess fat, leaving a thin coating.
  • Add vegetable oil to the skillet. Stir in oats, pecans, cinnamon, and salt. Toast, stirring often, until oats turn golden and smell nutty, about 6-8 minutes.
  • Return bacon to the skillet, drizzle maple syrup over granola, and stir until coated and slightly caramelized, 1-2 minutes. Remove from heat and let cool a few minutes—the granola will crisp as it cools.
  • To serve, layer granola, Greek yogurt, and blueberries in jars or cups. Drizzle with a little extra maple syrup if desired.

Notes

This granola keeps well for several days in a sealed bag, so you can make it ahead at home if you prefer. Layer parfaits just before serving for the best texture. Cleanup is easy—just one skillet and a spoon!
