Maple-Bourbon Campfire Popcorn

A smoky-sweet snack for chilly evenings, this maple-bourbon popcorn bursts with caramelized flavor and a touch of campfire char. Perfect for sharing by the fire after a long day on the trail.

Ingredients

  • 1/3 cup popcorn kernels
  • 2 tablespoons neutral oil such as canola or grapeseed
  • 2 tablespoons pure maple syrup
  • 1 tablespoon bourbon optional, for flavor
  • 1/2 teaspoon kosher salt
  • 2 tablespoons unsalted butter

Instructions

  • Prepare a medium campfire with a strong bed of coals.
  • Place the pot over medium heat and add the oil and 2-3 popcorn kernels. Cover and wait until the kernels pop.
  • Add the rest of the popcorn kernels, cover, and shake gently. Continue shaking as the popcorn pops, venting the lid occasionally.
  • Once popping slows, remove from heat. Immediately add butter, maple syrup, bourbon (if using), and salt. Stir quickly to coat the popcorn as the syrup caramelizes from residual heat.
  • Spread popcorn on a clean camp tray or foil to cool briefly before serving.

Notes

Keep a close eye to avoid burning the syrup and popcorn. Shake the pot often for even popping and heat distribution. For less cleanup, line your tray with parchment or foil before cooling.
