Ingredients

  • 1 cup rolled oats
  • 1 cup coconut milk canned or carton
  • 1/2 cup diced pineapple fresh or canned
  • 1/2 cup diced mango fresh or frozen
  • 2 tbsp chia seeds
  • 2 tbsp shredded coconut
  • 1 tbsp maple syrup

Instructions

  • Combine oats, coconut milk, chia seeds, pineapple, mango, and maple syrup in mason jars.
  • Stir well, top with shredded coconut.
  • Seal and chill overnight in cooler.
  • Eat straight from the jar with a spoon.

Notes

Prep several jars at once for multi-day trips. Keeps well in a cool box for up to 3 days. Shake before eating to remix.
