One-Pot Campfire Maple Pumpkin Pudding

Ingredients

  • 1 can pumpkin purée 15 oz
  • 1/2 cup maple syrup
  • 2 cups whole milk or non-dairy alternative
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  • In a saucepan, whisk pumpkin, maple syrup, milk, brown sugar, and spices until smooth.
  • Place over medium campfire heat. Stir constantly as mixture heats and thickens, about 10-12 minutes.
  • Once pudding coats the back of a spoon, remove from heat. Let cool 5 minutes and serve warm or chilled.
  • Optional: Top with whipped cream or toasted pecans.

Notes

Pumpkin pudding thickens as it cools, so serve warm at camp or chill in a cooler for a firmer treat later.
