Instructions
In a small pot, bring water, olive oil, salt, and pepper to a boil.
Stir in couscous, lemon zest, and juice. Remove from heat and cover.
Let sit for 5 minutes, then fluff with a fork.
Stir in chopped parsley and mint. Serve warm or at room temperature.
