Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 1/2 lemon zested and juiced
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a small pot, bring water, olive oil, salt, and pepper to a boil.
  • Stir in couscous, lemon zest, and juice. Remove from heat and cover.
  • Let sit for 5 minutes, then fluff with a fork.
  • Stir in chopped parsley and mint. Serve warm or at room temperature.
