Sausage & Veggie Foil Packet Scramble

This protein-packed breakfast scramble is loaded with sausage, peppers, and eggs, all baked together in a tidy foil packet over the campfire or grill. Minimal cleanup, maximum flavor.

Ingredients

  • 8 oz breakfast sausage pre-cooked, sliced
  • 1 zucchini diced
  • 1 red bell pepper diced
  • 1/4 cup yellow onion diced
  • 4 eggs
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp shredded cheddar cheese

Instructions

  • Cut four large sheets of heavy-duty foil.
  • Divide sausage, zucchini, bell pepper, and onion evenly among the foil sheets.
  • Crack one egg per packet over the top. Season with salt and pepper, and sprinkle with cheese.
  • Fold and seal each foil packet tightly.
  • Place packets on campfire grate or hot coals. Cook for 15–20 minutes, turning halfway through.
  • Open carefully and enjoy straight from the foil.

Notes

Prep the foil packets at home and store in a cooler for a grab-and-cook breakfast. Always check eggs for doneness before serving.
