Instructions
Mix flour, 2 tbsp sugar, baking powder, cinnamon, and salt in a bowl.
In another bowl, whisk eggs, milk, and vanilla. Add wet to dry ingredients and stir to combine. Fold in diced apples.
Heat oil in cast iron skillet over hot coals or stove until shimmering.
Drop spoonfuls of batter into the hot oil, flatten slightly. Fry 2-3 minutes per side, flipping with tongs until golden brown.
Drain fritters on paper towels and roll immediately in cinnamon sugar. Serve warm.
