Tex-Mex Campfire Queso Dip Cups
Mini foil cups filled with creamy queso dip, fire-roasted and served with tortilla chips for a dunkable, shareable snack.

Ingredients

shredded pepper jack cheese
1/2
cup
shredded cheddar cheese
1/2
cup
canned diced tomatoes with green chiles
drained
1/4
cup
milk or half-and-half

tablespoon
chopped cilantro

Instructions
In each foil muffin cup, combine a few tablespoons each of both cheeses, a spoonful of tomatoes, and a splash of milk.
Gently pinch the cups closed and place on a grate over hot campfire coals.
Roast for 10-12 minutes, turning once, until cheese is melted and bubbling.
Open carefully, garnish with cilantro, and serve with chips.
Notes
Mini foil cups make for easy serving and less cleanup. Enjoy straight from the packet or scoop onto plates.
