Tex-Mex Campfire Queso Dip Cups

Mini foil cups filled with creamy queso dip, fire-roasted and served with tortilla chips for a dunkable, shareable snack.

Ingredients

  • 1 cup shredded pepper jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup canned diced tomatoes with green chiles drained
  • 1/4 cup milk or half-and-half
  • 1 tablespoon chopped cilantro optional

Instructions

  • In each foil muffin cup, combine a few tablespoons each of both cheeses, a spoonful of tomatoes, and a splash of milk.
  • Gently pinch the cups closed and place on a grate over hot campfire coals.
  • Roast for 10-12 minutes, turning once, until cheese is melted and bubbling.
  • Open carefully, garnish with cilantro, and serve with chips.

Notes

Mini foil cups make for easy serving and less cleanup. Enjoy straight from the packet or scoop onto plates.
