Van Life Strawberry-Coconut Yogurt Bark

This no-bake yogurt bark is a refreshing, cooling snack for summer van adventures—bursting with sweet strawberries, coconut flakes, and a drizzle of honey for a crunchy, creamy bite.

Ingredients

  • 2 cups Greek yogurt plain or vanilla
  • 2 tablespoons honey
  • 1/2 cup sliced strawberries
  • 1/4 cup unsweetened coconut flakes
  • 2 tablespoons mini chocolate chips optional

Instructions

  • Line the sheet pan with parchment paper.
  • Mix yogurt and honey in a bowl. Spread evenly (about 1/2 inch thick) on the lined tray.
  • Scatter sliced strawberries, coconut flakes, and chocolate chips over the top.
  • Freeze or chill in cooler for at least 2 hours until solid.
  • Break into bark pieces for a grab-and-go snack.

Notes

Use a cooler with ice packs if a freezer isn't available. This snack is best for van-life or car camping with cold storage. Store bark in a sealed bag to prevent melting.
