Ingredients
4cupssliced peachesfresh or canned, drained
1/2cupgranulated sugar
2tbsplemon juice
1tspground cinnamon
1cupself-rising flouror use all-purpose + 1 1/2 tsp baking powder, 1/4 tsp salt
1/4cupgranulated sugarfor topping
1cupmilk
1/4cupunsalted buttermelted
Instructions
Grease the cast iron skillet. Add peaches, 1/2 cup sugar, lemon juice, and cinnamon. Stir and spread evenly.
In a bowl, mix flour, 1/4 cup sugar, milk, and melted butter to make a pourable batter.
Pour batter over peaches (do not stir).
Cover skillet loosely with foil. Place on campfire grate over medium coals. Cover with lid if available.
Cook for 25-30 minutes, rotating occasionally, until topping is golden and juices are bubbling.
Remove from heat and let cool 10 minutes before serving.
Notes
If using canned peaches, drain well. Rotate the skillet for even browning. Serve with a dollop of whipped cream if you brought a can!
