Ingredients

  • 4 cups sliced peaches fresh or canned, drained
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1 cup self-rising flour or use all-purpose + 1 1/2 tsp baking powder, 1/4 tsp salt
  • 1/4 cup granulated sugar for topping
  • 1 cup milk
  • 1/4 cup unsalted butter melted

Instructions

  • Grease the cast iron skillet. Add peaches, 1/2 cup sugar, lemon juice, and cinnamon. Stir and spread evenly.
  • In a bowl, mix flour, 1/4 cup sugar, milk, and melted butter to make a pourable batter.
  • Pour batter over peaches (do not stir).
  • Cover skillet loosely with foil. Place on campfire grate over medium coals. Cover with lid if available.
  • Cook for 25-30 minutes, rotating occasionally, until topping is golden and juices are bubbling.
  • Remove from heat and let cool 10 minutes before serving.

Notes

If using canned peaches, drain well. Rotate the skillet for even browning. Serve with a dollop of whipped cream if you brought a can!
