4flour tortillas8-inch
1cupshredded Monterey Jack cheese
1/2cuppineapple chunksdrained and chopped
1jalapeñoseeded and finely diced
2tablespoonscilantrochopped
1tablespoonolive oil
Instructions
Prepare a medium campfire and set grill grate or skillet over the heat.
Brush one side of each tortilla with olive oil.
On the un-oiled side of two tortillas, sprinkle half the cheese, pineapple, jalapeño, and cilantro. Top with remaining tortillas, oiled side out.
Cook on grill or skillet for 3-4 minutes per side, pressing gently, until cheese is melted and tortillas are crisp with grill marks.
Slice into wedges and serve hot.
Notes
For less mess, assemble quesadillas on a clean cutting board. Keep heat moderate to prevent burning. Excellent for group snacks or sharing with friends fireside.
