Campfire Pineapple Jalapeño Quesadilla Slices

These sweet-and-spicy quesadilla wedges combine gooey cheese, juicy pineapple, and mild jalapeño for a flavor-packed snack that's easy to cook right over the fire.

Ingredients

  • 4 flour tortillas 8-inch
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup pineapple chunks drained and chopped
  • 1 jalapeño seeded and finely diced
  • 2 tablespoons cilantro chopped
  • 1 tablespoon olive oil

Instructions

  • Prepare a medium campfire and set grill grate or skillet over the heat.
  • Brush one side of each tortilla with olive oil.
  • On the un-oiled side of two tortillas, sprinkle half the cheese, pineapple, jalapeño, and cilantro. Top with remaining tortillas, oiled side out.
  • Cook on grill or skillet for 3-4 minutes per side, pressing gently, until cheese is melted and tortillas are crisp with grill marks.
  • Slice into wedges and serve hot.

Notes

For less mess, assemble quesadillas on a clean cutting board. Keep heat moderate to prevent burning. Excellent for group snacks or sharing with friends fireside.
