Instructions
Heat olive oil in a cast iron skillet over campfire coals. Add onions and sauté 4–5 minutes until translucent.
Add garlic and cook 1 minute, then stir in shredded jackfruit, breaking up any large pieces with a spoon.
Sprinkle with smoked paprika, cayenne, pepper, and salt. Stir to coat.
Pour in BBQ sauce; reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until jackfruit is tender and sauce thickens.
Toast buns over the fire. Pile smoky jackfruit onto buns and serve hot.
