Foil Packet Moroccan Chickpea Tagine

A vibrant, plant-based foil packet lunch: chickpeas, sweet potato, apricots, tomatoes, and warming Moroccan spices cook together over the campfire for a fragrant, hearty stew with minimal cleanup.

Ingredients

  • 1 can chickpeas drained
  • 1 cup sweet potato peeled, diced small
  • 1/2 cup diced tomatoes canned or fresh
  • 1/4 cup dried apricots chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Build a bed of hot campfire coals.
  • In a bowl, toss chickpeas, sweet potato, tomatoes, apricots, olive oil, and spices.
  • Divide mixture between two sheets of heavy-duty foil. Fold well to seal.
  • Place packets on coals and cook 25 minutes, turning once, until potatoes are tender.
  • Carefully open foil (watch for steam) and serve with a spoon.

Notes

Prep all ingredients before leaving home for faster camp assembly. Foil packets are great for solo hikers—just eat right from the foil.
