Ingredients

  • 1 cup broccoli florets
  • 1 cup pineapple chunks
  • 1 medium red bell pepper chopped
  • 1 medium yellow bell pepper chopped
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil

Instructions

  • In a mixing bowl, toss broccoli, pineapple, and peppers with teriyaki sauce and olive oil.
  • Spread mixture in the center of a large sheet of heavy-duty foil. Fold and seal into a packet.
  • Place on hot campfire coals or grill grates. Cook for 15-18 minutes, turning once or twice, until vegetables are tender and pineapple is caramelized.
  • Open packet carefully (watch for steam) and serve.
