One-Pot Lemon Dill Salmon & Orzo

Ingredients

  • 1 tbsp olive oil
  • 1 cup orzo pasta
  • 2 cups water
  • 2 (5 oz) skinless salmon fillets
  • 1 cup frozen peas
  • 1 lemon zested and juiced
  • 2 tbsp fresh dill chopped (or 2 tsp dried dill)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Heat olive oil in a large saucepan. Add orzo and sauté 1–2 minutes until lightly golden.
  • Pour in water, bring to a simmer. Add peas, salt, and pepper. Lay salmon fillets on top. Sprinkle with half the dill, all lemon zest, and juice.
  • Cover and simmer gently for 10–12 minutes, until orzo is tender and salmon flakes easily.
  • Stir gently to combine. Sprinkle with remaining dill and serve hot.

Notes

Use pre-portioned orzo and frozen peas for fast prep. This meal cooks quickly and is perfect for evenings when you want a light, nourishing dinner with minimal cleanup.
