Ingredients
1tbspolive oil
1cuporzo pasta
2cupswater
2(5 oz)skinless salmon fillets
1cupfrozen peas
1lemonzested and juiced
2tbspfresh dillchopped (or 2 tsp dried dill)

1/4tspblack pepper
Instructions
Heat olive oil in a large saucepan. Add orzo and sauté 1–2 minutes until lightly golden.
Pour in water, bring to a simmer. Add peas, salt, and pepper. Lay salmon fillets on top. Sprinkle with half the dill, all lemon zest, and juice.
Cover and simmer gently for 10–12 minutes, until orzo is tender and salmon flakes easily.
Stir gently to combine. Sprinkle with remaining dill and serve hot.
