One-Pot Lemon Dill Salmon & Orzo

- 1 cup orzo pasta
- 2 cups water
- 2 (5 oz) skinless salmon fillets
- 1 cup frozen peas
- 1 lemon zested and juiced
- 2 tbsp fresh dill chopped (or 2 tsp dried dill)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large saucepan. Add orzo and sauté 1–2 minutes until lightly golden.
- Pour in water, bring to a simmer. Add peas, salt, and pepper. Lay salmon fillets on top. Sprinkle with half the dill, all lemon zest, and juice.
