Ingredients

  • 1 pint cherry tomatoes halved
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/4 cup fresh basil leaves torn
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  • Heat olive oil in a cast iron skillet over a medium campfire.
  • Add tomatoes and garlic. Cook, stirring occasionally, for 5–6 minutes until tomatoes burst and release juices.
  • Stir in basil, salt, and pepper. Cook 1 more minute until fragrant.
  • Serve warm as a vibrant side or spooned over grilled bread.

Notes

Use a seasoned cast iron skillet for best smoky flavor. Basil can be pre-torn and stored in a container or zip bag for easy camping use.
