Trailside Mediterranean Breakfast Wraps

No-cook pita wraps filled with hummus, crisp cucumber, roasted red pepper, and feta, ready in minutes for a fresh, energizing start on the trail or at base camp.

Ingredients

  • 2 whole wheat pita breads
  • 1/2 cup hummus
  • 1/2 cucumber thinly sliced
  • 1/4 cup roasted red pepper sliced, jarred or homemade
  • 1/4 cup feta cheese crumbled
  • 1 tbsp olive oil
  • 1/4 tsp dried oregano

Instructions

  • Lay out pita breads on a clean surface.
  • Spread each with a generous layer of hummus.
  • Top with cucumber, roasted red pepper, and crumbled feta.
  • Drizzle with olive oil and sprinkle with oregano.
  • Fold or roll up each pita to enclose the fillings. Enjoy immediately or wrap in parchment for later.

Notes
