Chipotle smoke hits first, then honey catching on the grates as the chicken starts to sizzle. Thighs are built for campfire heat—they stay juicy even when the coals run hot, and the edges crisp into a sticky, sweet-heat crust that tastes right at home outdoors.
This is a smart meal to plan ahead for. Stir the marinade at home and pack it in a leakproof bag so the chicken can mingle with the flavor in your cooler while you travel or set up camp. When it’s time to cook, you’re just grilling and turning, not measuring spices with dusty hands or chasing perfect temperatures.
Charred corn and scallion salsa keeps the plate lively with crunch and brightness. Grill the corn right beside the thighs so it picks up a little smoke, then cut it off the cob and toss it together while the chicken rests. It’s a low-fuss way to round out a hearty dinner without adding extra pans or cleanup.

- mixing bowls
- chef's knife
- Cutting board
- Tongs

- 4 each bone-in, skin-on chicken thighs about 2 lbs total
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 tablespoons chipotle in adobo sauce finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 ears corn husks removed
- 4 each scallions
- 1 each lime zested and juiced
- 1/4 cup cilantro roughly chopped
Instructions

- Preheat grill or build a medium-hot fire. Grill corn and scallions directly over heat, turning occasionally, until lightly charred (corn 10–12 minutes, scallions 3–4 minutes). Transfer to cutting board.
- Grill chicken thighs skin side down first, turning occasionally, until deeply browned and cooked through (about 20–25 minutes total, 165°F internal temperature). Move to indirect heat if flare-ups occur.
- While chicken cooks, slice kernels off the corn and chop scallions. In a bowl, mix corn, scallions, lime zest, lime juice, cilantro, and a pinch of salt.
- Serve chicken thighs hot with charred corn salsa spooned over the top.
