Lunch cooks itself when you seal it in foil. Foil Packet Teriyaki Beef & Veggie Stir-Fry is what I reach for when we want big flavor at camp without hauling out a skillet or scrubbing pans at the water jug.
Thin-sliced beef and a pile of broccoli and bell pepper go into a tight packet, then sit over a steady bed of coals until the steam does the work. As it heats, the teriyaki glaze clings to everything and keeps the meat tender while the veggies stay bright and crisp. Do the slicing at home, stash it cold in the cooler, and you can have a solid trail-day lunch ready in the time it takes to get the fire settled.
Lay the packets in a single layer and rotate them once so the corners don’t char. Eat straight from the foil, or dump it over rice or noodles if you’ve got them along.

Foil Packet Teriyaki Beef & Veggie Stir-Fry

Ingredients
- 8 ounces flank steak thinly sliced
- 1 cup broccoli florets
- 1 cup red bell pepper sliced
- 2 tablespoons teriyaki sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
Instructions
- Build a bed of hot embers in the campfire.
- Toss beef, broccoli, and bell pepper with teriyaki, soy sauce, sesame oil, and pepper.
- Divide between two foil sheets, fold and seal.
- Place on embers and roast 15–18 minutes, turning once, until beef is cooked and veggies are crisp-tender.
- Open foil carefully and serve with instant rice if desired.
