Ingredients

  • 4-6 Baking potatoes
  • 1 medium onion
  • 1 green pepper
  • butter or cooking spray
  • salt and pepper to taste

Instructions

Butter or spray one side of a sheet of heavy duty aluminum foil. Scrub the potatoes and slice them thinly (if you don't like the skins, peel the potatoes first). Thinly slice the onion and pepper. Place half the potatoes on the foil and season with salt and pepper. Place half of the onion and pepper on the potatoes. Repeat with other half of ingredients. Fold the foil over and seal the edges making a flat rectangular packet. Poke a few holes in the foil with a fork or the point of a knife. Cook on grill or on grate over campfire about 15 minutes per side. Cut open the foil when done and serve right out of the packet.
