Ingredients
- Rum
- Pineapples
- Ginger beer
- Brown sugar
Instructions
Cut the pineapples into 3" chunks and marinate them in a plastic bag with enough rum and ginger beer to cover them. Generally a bottle of dark rum will do.
Marinate for a good while, overnight if you can stand the wait
Put 2 or 3 chunks on each barby skewer, and roll in brown sugar, then grill on a hot BBQ until they are caramelised and bubbling.
Don't waste the marinade!! Pour into glasses and drink it.
