Ingredients

  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 cup brown or green lentils rinsed
  • 1 can fire-roasted diced tomatoes 14 oz
  • 2 cups vegetable broth
  • 1/2 cup pitted kalamata olives halved
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley for garnish

Instructions

  • Heat olive oil in the pot over medium heat.
  • Add onion and sauté 3 minutes. Add garlic and cook 1 minute more.
  • Stir in lentils, tomatoes (with juice), broth, olives, oregano, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer covered for 25-28 minutes, stirring occasionally, until lentils are tender.
  • Taste and adjust seasoning. Serve hot, garnished with parsley.

Notes

Lentil stew is hearty, packs well, and is great for prepping ahead. Use fire-roasted tomatoes for extra campfire flavor. Serve with crusty bread or pita.
