Ingredients
- Tomato sauce
- Favourite fruit or
- combination.
Instructions
Tomato leather is like a fruit rollup made out of tomato sauce. The leather softens and rehydrates easily at the campsite and can be used as a base for many meals.
Cover a drying tray with plastic wrap. Pour tomato sauce onto the plastic wrap. Smooth out the sauce, spread the mixture evenly. It should be less than 1/4 inch thick. Dry for 8-10 hours. When leather is well dried on top and around the edges, peel the leather off of the plastic wrap, turn the leather over and continue drying about 2-3 more hours. When leather is supple and resembles actual leather, let cool and roll the leather into a compact log and store it in the sealed plastic bag.
Fruit leather can be made the same way by using fruit puree that resembles apple sauce. Cook fruits for about 5-10 minutes with a little water before mashing then follow the directions for tomato leather. You may need to add a little sugar to the puree depending on the fruits used. A small about of lemon juice will also keep fruit from darkening.
