Ingredients

  • 2 boneless chicken breasts (or any meat or tofu)
  • 1 bell pepper (any color)
  • 1 small onion
  • 1 shredded carrot (optional)
  • peanut sauce, any brand

Instructions

*The beauty of this recipe is that you can cook it any number of ways. You can even cook it on a shish-ka-bob and add sauce at the end. Be creative.

Chop all ingredients (chicken, pepper, onion) in to chunky bite-sized portions and separate onion layers so they will cook evenly.

Cook all ingredients together in a skillet about 10 minutes, but as we all know cooking times vary wildly when camping (so just cook until the chicken is done).

When chicken is cooked through and flame is still on, add as much or as little sauce as you like to the pan and the carrot, if using. Cook until sauce is heated through.

Serve over rice or as is.
